Ingredients:

- 1 cup almond flour
- 1/2 cup granulated sweetener (such as Swerve or Erythritol)
- 1/4 cup melted butter
- 1/4 cup creamy peanut butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup chopped peanuts (optional)

Instructions:

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together almond flour, granulated sweetener, and baking soda.
3. In a large bowl, cream together melted butter, peanut butter, eggs, and vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
5. If using chopped peanuts, fold them into the dough.
6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
7. Flatten the dough balls slightly with a fork or your fingers.
8. Bake for 12-14 minutes or until the edges are lightly golden.
9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Note: Depending on your sweetener, you may need to adjust the baking time.
