Here's a simple recipe for Sweet and Sour Fish:


Ingredients:


- 4 fish fillets (any white fish works well, such as cod or tilapia)
- 1 cup cornstarch
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup mixed bell peppers (green, red, yellow)
- 1 cup pineapple chunks
- 1/4 cup vinegar
- 1/4 cup sugar
- 2 tablespoons ketchup
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/4 teaspoon black pepper

Instructions:


1. Coat the fish fillets with cornstarch, shaking off excess.
2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
3. Add the fish and cook until golden brown and cooked through (about 3-4 minutes per side).
4. Remove the fish from the skillet and set aside.
5. In the same skillet, add the remaining 1 tablespoon of vegetable oil.
6. Add the sliced onion and cook until softened (about 2 minutes).
7. Add the minced garlic and cook for an additional minute.
8. Add the mixed bell peppers and pineapple chunks, cooking until the vegetables are tender-crisp (about 2-3 minutes).
9. In a small bowl, whisk together the vinegar, sugar, ketchup, soy sauce, salt, and black pepper.
10. Pour the sweet and sour sauce into the skillet, stirring to coat the vegetables.
11. Return the cooked fish to the skillet, spooning some of the sweet and sour sauce over the top of each fillet.
12. Serve hot and enjoy!
