Ingredients:


- 2 slices of whole grain bread
- 1 ripe avocado, mashed
- 2 eggs
- Salt and pepper to taste
- Optional: cherry tomatoes, spinach, or red pepper flakes for added flavor


Instructions:


1. Toast the bread for 2 minutes.
2. Mash the avocado and spread on top of the toast.
3. Crack the eggs into a bowl and whisk. Add a pinch of salt and pepper.
4. Heat a non-stick pan over medium heat. Pour in the eggs and scramble for 2-3 minutes.
5. Place the scrambled eggs on top of the avocado toast.
6. Add any desired toppings (cherry tomatoes, spinach, or red pepper flakes).
